How to make
Ingredients
- 500 ml tomato sauce
- 4 cloves of garlic
- spices: cumin, smoked paprika, salt, pepper
- condiments: chipotle in adobo sauce
- 750 ml vegetable broth
- 3 cans beans (black, kidney, pinto, aduki)
- lime juice (preferably fresh, can substitute for concentrate)
- fresh cilantro
Instructions
- Pan on medium heat, once hot add oil
- Add 4 cloves of garlic (grated or chopped) and bake for 1-2 minutes until raw smell goes away
- Add tomato sauce, cumin, smoked paprike, chipotle in adobo sauce (if you want to be fancy, you can fry the spices on low heat for 30-60 seconds)
- Add the broth, beans, black pepper
- Simmer for 20-30 minutes, while stirring occasionally
- Blend it all with an immersion blender and you’re done
- Top with fresh cilantro and lime juice
- Add a protein
- I think the soup with a protein makes a good and complete meal, but it’s possible to add extra things, see the add-ons
