Mexican bean soup

How to make

Ingredients

  • 500 ml tomato sauce
  • 4 cloves of garlic
  • spices: cumin, smoked paprika, salt, pepper
  • condiments: chipotle in adobo sauce
  • 750 ml vegetable broth
  • 3 cans beans (black, kidney, pinto, aduki)
  • lime juice (preferably fresh, can substitute for concentrate)
  • fresh cilantro

Instructions

  • Pan on medium heat, once hot add oil
  • Add 4 cloves of garlic (grated or chopped) and bake for 1-2 minutes until raw smell goes away
  • Add tomato sauce, cumin, smoked paprike, chipotle in adobo sauce (if you want to be fancy, you can fry the spices on low heat for 30-60 seconds)
  • Add the broth, beans, black pepper
  • Simmer for 20-30 minutes, while stirring occasionally
  • Blend it all with an immersion blender and you’re done
  • Top with fresh cilantro and lime juice
  • Add a protein
  • I think the soup with a protein makes a good and complete meal, but it’s possible to add extra things, see the add-ons
